Shakshuka

Ingredients

  • 1 onion
  • 4 gloves of garlic
  • 2 tsp coriander powder 
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp chilli powder
  • 2 can diced tomatoes
  • 1 can black beans
  • 1 Tbsp lemon juice
  • 1 Tbsp brown sugar
  • 1 Tbsp red wine vinegar
  • Salt to taste
  • 5 eggs
  • Feta

Directions

  1. Dice and sauté the onion
  2. Add the crushed garlic and spices. Cook for 5 minutes.
  3. Add the diced tomatoes and black beans. Cook for 10 minutes.
  4. Combine with the brown sugar, lemon juice, salt and red wine vinegar.
  5. Create 5 pockets and add the eggs. Sprinkle the Feta on top and cover until the eggs are cooked.
