Ingredients

  • 2 1/2 cups of lentils
  • 8 cups of water
  • Coconut oil
  • 1 tbsp cumin
  • 1 tsp tumeric
  • 1 onion
  • 1 tsp salt
  • 1 can of tomatoes
  • 3 gloves garlic
  • 3 tsp garam masala
  • 3 tsp coriander powder
  • 0-2 tsp chili powder (to taste)
  • Cilantro

Directions

  1. (Optional) Soak lentils overnight. Apparently this makes them less gassy.
  2. Add lentils to a boiling pot of water. Simmer for 20 minutes.
  3. In a frying pan combine oil, cumin and turmeric.
  4. Add onions and cook until caramelized.
  5. Add garlic and cook for another 2 minutes.
  6. Add tomatoes and cook until soft.
  7. Add garam masala, coriander powder, chilli powder and cook for another 20 seconds.
  8. Add the spices to lentils. Turn off the heat and let it sit for 30 minutes.
  9. Add salt and serve
