Ingredients
- 2 1/2 cups of lentils
- 8 cups of water
- Coconut oil
- 1 tbsp cumin
- 1 tsp tumeric
- 1 onion
- 1 tsp salt
- 1 can of tomatoes
- 3 gloves garlic
- 3 tsp garam masala
- 3 tsp coriander powder
- 0-2 tsp chili powder (to taste)
- Cilantro
Directions
- (Optional) Soak lentils overnight. Apparently this makes them less gassy.
- Add lentils to a boiling pot of water. Simmer for 20 minutes.
- In a frying pan combine oil, cumin and turmeric.
- Add onions and cook until caramelized.
- Add garlic and cook for another 2 minutes.
- Add tomatoes and cook until soft.
- Add garam masala, coriander powder, chilli powder and cook for another 20 seconds.
- Add the spices to lentils. Turn off the heat and let it sit for 30 minutes.
- Add salt and serve
